The humble, nutritious carrot is often added to stews, casseroles, soups, and salads. The has a surprisingly sweet flavour, and when accompanied with sugar, honey, or syrup, it tastes simply delicious. Often added to Sunday lunches, honey-roasted carrots add a touch of sweetness to the salty, savoury flavours in a roast dinner.
However, roasting carrots in the oven can take some time, especially if you don’t parboil them first. This from uses an which they claim not only saves time but “enhances their flavour.” The result is tender, sweet carrots with a crispy, caramelised outside.

Air fryer honey-roasted carrots recipe
Ingredients:
1kg medium-sized carrots
Two tablespoons honey
One teaspoon garlic powder
One tablespoon olive oil
One to two sprigs of fresh thyme leaves only
A pinch of salt and black pepper
Method:
1. First, you’ll need to wash and peel your carrots. Once they’re peeled, cut them into sticks or batons ensuring they are roughly the same size. This will ensure they cook evenly.

2. Preheat your air fryer to 200C for five minutes.
3. Put the carrot batons in a large bowl and add the honey, olive oil, salt, black pepper, thyme and garlic powder. Adjust the seasoning to your preference.
4. Toss the carrot batons until they are well-coated in the honey glaze.
5. Put the coated carrots in the air fryer basket in one layer.
6. Cook them for 15 minutes at 180C. Stop half way and shake the basket. The carrots will be cooked when they’re tender yet caramelised on the outside.
7. Serve immediately with more fresh thyme.
