A chef has shown how you can achieve ‘glass like’ crispy skin salmon by adding just one ingredient to the pan.

Andy Hearnden, known as Andy Cooks on social media, shared his for crispy skin salmon on . Speaking in the video, Andy said: ”Crispy skin salmon: it’s a life lesson worth learning and it’s really not that hard.”

His top tip? The chef uses a protein press to apply pressure on top of salmon fillets cooking in a pan.

On his he states that a protein press or a “burger smasher” helps you to achieve an even , sear and caramelisation on your protein. He also claims that it “really does make all the difference especially when cooking a smash burger at home or crispy skinned .”

However, you don’t necessarily have to spend on an expensive protein press. Placing a heavy pan on top of the fish can work just as well.

How to get perfectly crispy salmon skin

The chef starts by putting a frying pan on a medium or high heat. He said that it should be hot “but you don’t want it ripping hot.”

Andy then seasons the salmon fillets with salt and adds a “decent amount” of olive oil to the pan. Once the oil is hot, he adds the fish to the pan and sprinkles salt on top of the fillets.

Next he adds the protein press on top of the salmon “to apply some general pressure”. Andy added: “If you don’t have a protein press, you can simply use another frying pan.

“Also worth mentioning this will work with any fish that you want crispy skin on.” The chef warned that “temperature control is super important”.

After putting the protein press on top of the salmon, he turns the temperature “right down low” and advises that you “don’t want this to be really rapidly cooking.” He noted that the fish should cook almost all the way through before it is flipped over.

Andy said you know when the salmon is almost cooked all the way though by checking “on the side how far up that piece of flesh is cooked.” After cooking the fish for five minutes and observing how much it had cooked, he took the protein press off and flipped the fillets over in the pan with a spatula.

The result of cooking the salmon like this is “glass like skin and flesh that’s still lovely and pink”, according to Andy. His TikTiok video demonstrating how to cook the fish has garnered 929,100 views, 50,500 likes and nearly 200 comments.

One user shared a tip: “Fry from cold so the fat under the skin renders and doesn’t shrink.” Another said: “I found using an airfryer always gets you crispy skin.”

A third user added: “Yum!! That’s why you’re a lean machine – salmon is so amazing. I lost heaps of weight living off salmon.”

Someone else who watched Andy’s cooking tutorial branded it as “perfectly cooked salmon.” Other users expressed positive feedback with comments including “good ”, “amazing” and “very nice.”
