Chicken casserole recipe

  • Serves: five people
  • Prep: 15 minutes
  • Cooks in: 50 minutes

Ingredients

  • Half tbsp olive oil
  • 150g bacon, chopped
  • 750g boneless skinless chicken thighs, cut into 3cm
  • Three garlic cloves, minced
  • One onion, sliced
  • Three carrots, peeled, halved lengthwise, sliced 1cm thick
  • Two celery stalks sliced 1cm
  • 375ml red wine
  • Four tbsp flour
  • 750ml beef stock
  • 400g crushed tomato, canned
  • Two tsp Worcestershire sauce
  • One-and-a-half tsp dried thyme
  • Two dried bay leaves
  • 350g baby potatoes, halved
  • 200g mushrooms, halved
  • 150g green beans, trimmed and halved
  • Salt and pepper

Method

Place oil and bacon in a large, heavy-based casserole pot over high heat. When the oil is hot and the bacon releases some fat, add the chicken, season with salt and pepper, and cook until the meat is browned.

Add the garlic and onion and cook for one minute. Then add the celery and carrots and cook for two minutes.

Add the red wine, simmer rapidly for two minutes (until the wine’s smell has evaporated), and then mix in the flour.

Slowly pour in the beef stock while stirring, then add the tomato, Worcestershire sauce, thyme, bay leaves, salt and pepper. Cover the casserole pot with a lid and simmer for around 30 minutes.

Once the half hour is up, add the mushroom and green beans, then simmer without a lid for 10 more minutes.

Serve the delicious chicken casserole with parsley, if desired, crusty bread, and mash (if you wish).
