What type of salmon should you buy?

Salmon is incredibly easy to cook as the hardest part is choosing the best type of fish when you are at the supermarket. Kristen says her favourite is steelhead (though there is some debate as to whether steelhead is closer to salmon or trout).

Kristen explained: “This is my personal favourite! Its high fat content means it never becomes dry, and the flavour is very mild. (It’s also not technically salmon, but it looks and tastes so similar that it’s often called Steelhead Salmon).”

King or coho salmon also have high fat percentages which add to their flavour but no matter what fish you buy it is best to avoid Atlantic farmed salmon for environmental reasons.

How to make tasty baked salmon

Instructions

Preheat the oven to 200C. Put the salmon on a baking sheet and make sure there is enough room between each fillet.

Drizzle half a teaspoon of olive oil on each fillet, then season with salt and pepper.

If you are using seasoning, then sprinkle them on top of the salmon now so they bake into the skin while the salmon is cooking in the oven.

Put the salmon in the oven for eight minutes. While the salmon is cooking, prepare a salad, vegetables or whatever side dish you wish to serve with it.

Once the salmon is ready, take it out of the oven and let it rest for a few minutes. It should be flaky, tender with browned skin and a few very small white sports.

Kristen said: “The white stuff that you see when salmon cooks is protein that has coagulated and been pushed to the surface. Properly cooked salmon will only have a tiny bit of this.”
