This quick and easy mid-week meal was a life saver
Trying to balance work, regular and a social life can seem very close to impossible and that’s before you add in cooking meals for yourself.
There’s simply not enough time in the day which is why ,when I cook during the week, I try to keep my time in your kitchen to a minimum.
This week I tried a delicious chorizo, mozzarella and gnocchi bake from that was not only comforting and filling but quick to prepare – from prep to plate it was only about half an hour.
It has the added benefit of being a one-pan meal if you have a saucepan which can also go into the oven.
However, when I’ve made this meal in the past, I’ve cooked it on the stove in a cast iron pan then transferred the pan straight into the oven to save on dishes.

This meal was easy to make and delicious to eat
I did substitute one of the ingredients – instead of a fresh ball of mozzarella, I used the pre-shredded kind because, honestly, I think it cooks better and I prefer it. I know it’s not authentic but let a girl have her vices.

Ingredients

1 tbsp olive oil

1 onionfinely chopped

2 garlic cloves crushed

120g chorizo diced

2 x 400g cans chopped tomatoes

1 tsp caster sugar

600g fresh gnocchi
-
125g mozzarella ball, cut into chunks

small bunch of basil torn

Onion and chorizo cooking down
Method
Heat the oil in a medium sized pan on a medium heat then fry the onion and garlic until soft and fragrant, around eight to 10 minutes.
Add the chorizo in and fry for a further five minutes then tip in your chopped tomatoes and sugar., Season with salt and pepper (I also added some mixed herbs and smoked paprika to taste).
Bring the mixture to a simmer then add the gnocchi and cook for another eight minutes. Heat the grill on high.
Stir ¾ of the mozzarella and most of the basil through the mixture then pour into an oven proof dish and top with the remaining mozzarella.
Grill for three minutes or until the cheese is bubbling and golden then scatter over the remaining basil.
Enjoy by itself or with a serving of green salad.
