Scones will be fluffier and taste better if you add 1 simple ingredient to the mixing bowl

Tessa Arias, a baker and founder of Handle the Heat, has shared that homemade scones will be “better than your favourite coffee shop” if you use buttermilk.

She said: “This is absolutely the preferred liquid for scones. It will result in tender, taller scones because of how its acidity reacts with the baking powder and tenderises the dough overall. It also adds a lovely tang to create more depth of flavour.”

Buttermilk is much better to use when making scones due to how it combines with the powder, as it helps them rise in the oven to get a lighter and fluffier texture.

Adding buttermilk also helps improve the taste as it balances out the richness butter and sweetness of the dough so you get a more enhanced flavour.

How to make tastier scones

Ingredients

  • 381g of plain flour
  • 66g of caster sugar
  • 170g of cold unsalted butter
  • 240ml of buttermilk
  • Two large eggs
  • One tablespoon of baking powder
  • Half a teaspoon of baking soda
  • One teaspoon of vanilla extract
  • One teaspoon of salt

To begin, place a rack in the centre of your oven and preheat to 200C. Prepare a baking tray by lining it with baking paper.

In a large mixing bowl, add the flour, sugar, baking powder, baking soda and salt.

Cube the butter and add to the bowl. Keep cutting up the butter until it resembles large peas.

In a separate bowl, add the buttermilk, one egg and the vanilla extract.

Make a well in the middle of the powdery bowl with the flour mixture. Add the liquid mixture to the well and mix until you have a dough.

If you wish to add dried fruit, nuts or chocolate chips to your scones, do so before mixing the dough.

Place the dough onto a floured surface. Split into two parts and lightly knead until two centimetres thick. Use a round cookie cutter to shape the dough and make the scones round.

In a small bowl, add the remaining egg with one teaspoon of water to make an eggwash, then brush it all over the scones.

Put the scones on the tray and into the oven, then cook for 12 to 15 minutes until they have lightly browned.

Once the time is up, your delicious and fluffy scones are ready to eat. They are best served warm with a generous amount of cream, butter and jam.
