Chicken noodle soup is the best winter comfort meal and is easy to make with 5 ingredients

Many people feel down during winter due to the freezing cold temperatures, but one way to feel better is to eat something nutritious yet comforting.

The most difficult time of the year for most people tends to be near the end of in January and February since it has been a long time of dreary weather.

Chicken noodle soup is thought to be one of the most comforting meals and the is simple to make with only five ingredients.

Kylie Perrotti, a and founder of , has shared that her chicken noodle is “almost embarrassingly easy to make” but is well-loved due to its “simplicity.”

She said: “The broth is bright and gingery, with chicken thighs lending just the right amount of fat and richness to the broth to give it a nice mouthfeel. Peas work perfectly as a quick veggie addition, but throw in spinach or baby corn instead.”

How to make chicken noodle soup 

You will need: 

  • Four chicken thighs (bone-in, skin-on)
  • One yellow onion
  • One piece of ginger (around 7.5 centimetres)
  • 75g of green peas (fresh or frozen)
  • 225g of noodles
  • Pinch of salt
  • Fresh herbs, chilli or sesame oil for garnish (optional)

Recipe:

To begin, peel the onion and slice. Wash the ginger and crush it lightly with the back of a knife.

Place the chicken thighs in a large pot and season with salt. Then cover the chicken with 1.4 litres of water and bring to a boil.

Add the onions, ginger and a little more salt to the pot. Reduce the heat and let the simmer for 35 to 45 minutes.

While the broth is cooking, skin the surface occasionally to remove any scum from the top.

Once the time is up, remove the chicken from the heat and place it in a bowl. When it has cooled, remove the bone from the meat and shred it.

Take out any chunks of ginger and onions and throw them away. Keep the broth on a low simmer.

Now, it is time to cook the noodles. Place in a small pot and cook following the packet instructions. Then drain and set aside for now.

Return the chicken to the soup, add the peas and bring it to a boil. Then, simmer for five minutes until the liquid is green.

To serve, place the noodles in a bowl and ladle a generous amount of broth on top. If you wish, garnish with fresh herbs, chilli or sesame oil. Your tasty chicken noodle soup is now ready to eat.
