Don’t miss… [UPDATE]
One-pot marry me salmon
Ingredients
- Four salmon fillets
- Two shallots, sliced
- Four garlic cloves, crushed
- A couple of diced sun-dried tomatoes
- 250ml vegetable stock
- 250ml double dream
- 1tsp paprika
- 1tsp dried basil
- 1tsp dried thyme
- 1tsp chilli flakes
- Handful of spinach
- Fresh parsley
- Salt and pepper
Method
First, place your salmon fillets in a bowl and season with salt and pepper, making sure to rub the seasonings in well. Set aside.
Over a medium heat, drizzle a splash of oil in a pan. Add in the slice shallots and minced garlic and saute until they have softened, for around five minutes.
Then, add the sundried tomatoes, vegetable stock, double cream and the seasonings, including salt and pepper to taste. Give it a good mix to ensure everything has combined.
Take a handful of spinach and add this into the pan as well, creating a bed for your salmon. Place each salmon fillet in skin-down, then cover the pan with a lid and turn the heat right down.
Leave this to cook for around 10 minutes, or slightly longer depending on how thick your fillets are. By this time, the sauce should have thickened up nicely too.
Once the fish has cooked, take it off the heat and garnish with some chilli flakes and fresh parsley.
Serve each fillet and a good helping of sauce with pasta, rice, greens or potatoes, or anything else that you fancy.
