Nutritionist’s five-minute soup recipe perfect for a healthy lunch

Thinking up a healthy lunch can often be a tough task, with many opting for a cheap and quick meal deal, but a nutritionist has come to the rescue with a healthy and easy lunch that only takes five minutes.

In the cold winter months, there’s nothing better than being warmed up by a hot flavoursome bowl of soup and dietician and influencer Emily English has come up with a Thai-inspired gyoza soup that anybody can cook.

With just a handful of ingredients, the can also be adapted to use whatever veg or produce you might have in the fridge to help try and reduce your food waste while also cooking up a tasty treat.

The soup base itself contains just five ingredients: jarred garlic, ginger, and chilli, a big spoonful of Thai red curry paste, and a tin of coconut milk—all of which are pantry essentials and can be ready to be used at a moment’s notice.

For the rest of the ingredients, Emily uses some carrots, tender stem broccoli as well as frozen gyozas and finishes off with some spring onions and a drizzle of chilli oil.

An actual 5 minute lunch by a nutritionist AD This is my favourite lunch to make. It contains warming ginger, garlic and aromatic chilli from the Very Lazy chopped range. Simply throw everything into one pot and simmer. To serve 2 you will need: 1 tsp EACH of Very Lazy chopped chillies, garlic and ginger 1 tin light coconut milk and 1/2 tin water 2 tsp Thai red curry paste 2 tbsp soy sauce Juice of 1/2 a lime 1 stock cube 1 large carrot and a handful of tender-stem broccoli 12 frozen gyoza Coriander and optional crispy chilli oil to serve In a large pot, sweat the Very Lazy chilli, garlic and ginger down for 30s. Add the Thai curry paste, stock cube, and the tin of coconut milk and extra water. Peel in the carrot, add the tender-stem and 6 frozen gyoza. Place a lid on the pot and bring it to a simmer for 3 minutes. Finish with soy sauce and lime juice to taste and serve.

For even more flavour Emily suggests adding a stock cube, soy sauce and a fresh squeeze of lime into the broth to help brighten it up and add even more depth.

The has gone viral on racking up more than 1.3 million views with 52,000 likes with commenters quick to give it a go.
