Mary Berry’s winter cheesy soup recipe is ready to eat in 25 minutes

As the temperatures are rather chilly outside, and sometimes the home may feel a tad cool, a lovely warming can be the perfect treat.

Only taking 25 minutes to make from start to finish, it’s the ideal menu for a quick, easy lunch or dinner at home.

And 10 minutes of the only involves infusing the milk with bay leaves and nutmeg for extra flavour, which is so easy!

Mary Berry’s leek and Stilton soup recipe

Serves: six people

Ingredients

350g leeks

600ml milk

Two bay leaves

A little freshly grated nutmeg

75g butter

75g plain flour

1.2 litres stock

Salt and black pepper

150g Stilton cheese, coarsely grated

A little single cream

Fresh chopped parsley or chives

Method

Finely slice the leeks, put into a colander to wash and drain thoroughly. Measure the milk into a small saucepan, heat until hand hot over a low heat, then add the bay leaves and a grating of nutmeg. Cover the pan and simmer for 10 minutes.

When nearly ready, melt the butter in another saucepan, add the flour and cook for a few moments. Add the strained hot milk, stirring well, then add the stock. Stir in the leeks, season and bring to the boil.

Simmer for a few minutes, then add in the cheese and stir well. Cover and simmer over a low heat for 15 minutes. Serve with a little dollop of single cream, and garnish with chopped parsley or chives. Can be served with toasted bread.
