Cod with Lemon Butter Sauce
6 to 8 pieces of fresh cod fillets
2 tbsp. (30 mL) olive oil
Juice of one lemon
½ tsp. (2.5 mL) salt
½ tsp. (2.5 mL) black pepper
Flour dredge
½ cup (125 mL) flour
2 tbsp. (30 mL) cornstarch
1 tsp. (5 mL) salt
1 tsp. (5 mL) black pepper
1 tsp. (5 mL) garlic powder
1 tsp. (5 mL) paprika
Lemon Butter Sauce
4 to 5 tbsp. (60-75 mL) butter
3 garlic cloves minced
2 tbsp. (30 mL) fresh parsley
Juice of one lemon
In a bowl combine the flour cornstarch salt pepper garlic powder and paprika. Heat olive oil to medium-high in a sauté pan. Pat the cod fillets with paper towel to remove the excess moisture. Season both sides of the cod with salt and pepper. Squeeze lemon juice on all sides of the fish. Lightly coat the cod fillets in the flour mixture.
Place cod in the heated oil, allow to brown and form a crust before flipping (should take about 5-6 minutes for a thick cod fillet). Brown the opposite side for three minutes. Transfer the cod to a paper towel to soak up the excess oil.
In the same pan on medium heat melt the butter with the garlic add in the fresh parsley. Cook for a few minutes to soften the garlic. Do not brown. Turn off the heat and add the lemon juice whisk together. Drizzle the lemon butter sauce onto the fish, and serve.
