Ingredients (Serves Four)
- 500g leftover cooked turkey, shredded
- 130g pancetta or bacon, cubed
- Two large leeks, thinly sliced
- Salt and pepper, to taste
- 1 tbsp olive oil
- Four garlic cloves, crushed
- 2 tbsp plain flour
- 150ml water
- 300ml double cream
- 2 tsp English mustard
- ⅓ lemon zest
- 320g pack of ready-rolled puff pastry
- One egg, whisked

Method
Prepare the Oven and Bacon
Preheat your oven to 200°C (fan). Heat a large non-stick frying pan over high heat and cook the pancetta until crispy, about 6–8 minutes.
Remove with a slotted spoon and set aside.
Cook the Leeks
In the same pan, add olive oil and the sliced leeks. Season with salt and pepper, cooking for 5–6 minutes until softened.
Add the crushed garlic and saute for 30 seconds.
Create the Filling
Combine the leeks and bacon in a large saucepan over medium heat. Stir in the flour and water to thicken the mixture, cooking for 2 minutes.
Add the shredded turkey, double cream, mustard, and lemon zest. Mix thoroughly and adjust seasoning as needed.
Assemble the Pie
Transfer the filling into a deep pie dish.
Cover with the puff pastry, trimming the edges if necessary. Brush the pastry with whisked egg and sprinkle with a touch of salt.
Bake and Serve
Bake in the preheated oven for 25 minutes, or until the pastry is perfectly golden.
Serve hot and enjoy the rich, creamy flavors of this festive creation.
