You can make delicious Christmas scones from your pudding leftovers
Christmas is a time to overindulge in your favourite desserts, but it can be a waste of both food and money if there is a lot of pudding left uneaten after the holidays.
However, there is a simple way to up your Christmas dessert leftovers without throwing them away as you turn them into fruity scones.

How to make Jamie Oliver’s Christmas pudding scones
Ingredients
- 20g of dried cranberries
- 80g of unsalted butter (cold)
- 250g of self-raising flour
- 30g of golden caster sugar
- 70g of leftover Christmas pudding or cake
- One orange
- One large egg
- Half a teaspoon of mixed spice
- One tablespoon of treacle
- Four tablespoons of semi-skimmed milk (plus extra for glazing)

Method
Preheat the oven to 200C (Gas Mark 6), then prepare a baking sheet by lining it with baking paper.
Take the butter straight from the fridge and cut it into small cubes. Then, roughly chop up the cranberries and zest the orange.
Sift the flour into a mixing bowl through, then also add the sugar and cubed butter, Rub the butter into the flour and sugar until you have a mixture that resembles breadcrumbs.
Crumble in the leftover Christmas pudding or cake. Make sure to remove any icing or marzipan from the pudding before adding it to the mixing bowl.
Add the cranberries, orange zest and mixed spice to the mixing bowl, and gently stir the mixture until everything is combined.
These scones are perfect to eat with a dollop of creme fraiche
Mix the egg and milk together, then add to the mixing bowl and stir with an eating knife until you have a soft dough.
Once you have a dough, fold in the treacle tart at the end of mixing and then tip the mixture out onto a clean, lightly floured surface.
Use a rolling pin to roll out the mixture until it is two and a half centimetres thick. Use a round five-centimetre cookie cutter to cut out eight scones.
Place the scones onto the baking sheet and brush the tops with milk. Then bake in the oven for 12 minutes until they are golden, risen and fluffy.
Your delicious Christmas scones are now ready to be served.
