How to make orange shortbread recipe:
Ingredients:
- 500g plain flour
- 125g icing sugar
- 375g butter
- Finely grated zest of two oranges
- Two to three dried bay leaves
- 100g granulated sugar
Method:
Firstly, place the flour, icing sugar and orange zest in a large bowl. Rub in the butter to form a breadcrumb like mixture, then gather together into a soft dough. Form into a large rectangular shape, wrap in cling film and chill in a refrigerator for one hour.
Next, roll out to one centimeter thick and use a circular cutter of your choice.
Select the fan setting at 160°C on the oven and cook the biscuits for 25 minutes until lightly golden.
While the shortbread is cooking in a food processor, blitz together the bay leaves and sugar. Coat the biscuits in the sugar when they are still warm and then leave to cool slightly before transferring to a wire rack to cool completely.
