Ingredients 

Two ripe bananas, medium in size, mashed

120g butter, softened

100g caster sugar

200g self-raising flour

Two medium eggs, beaten

One teaspoon of baking powder

One teaspoon ground cinnamon

Method 

Start by mixing together the butter and sugar until they are smooth. Then slowly add the beaten eggs and mix until they are combined.

The next step is to add the flour, baking powder and ground cinnamon, followed by the mashed bananas.

Make sure to stir everything together gently – just until it’s all combined. You don’t want to end up overworking the batter.

After, transfer the mixture to a greased baking tin and place it in the air fryer at 160 degrees for 30 minutes. There’s no need to preheat the air fryer beforehand.

At the end of the cooking time, the banana bread should be browned on the outside and cooked all the way through.

Insert a metal skewer to check it isn’t wet or soggy on the inside.

If it needs to be cooked for longer, check on it every five minutes to ensure it doesn’t burn.

If the outside is already browned, you might need to cover it with some foil.
