Ingredients
- 2-3 potatoes, peeled and quartered
- 2 leeks, sliced
- 3 celery sticks, chopped
- 2 carrots, chopped
- 1 onion, finely diced
- 2-3 tbsp butter
- 1 tbsp garlic
- 3 sprigs fresh thyme
- 1.2L vegetable broth
- 200ml milk
- Salt and pepper
- Fresh chives, to garnish
