French onion soup is the perfect winter lunch or dinner, and it is super simple to make.

French onion soup recipe
Ingredients:
50g butter
One tablespoon of olive oil
1kg onions, halved and thinly sliced
One teaspoon of sugar
Four garlic cloves, thinly sliced
Two tablespoons of plain flour
250ml dry white wine
1.3L of hot strongly flavoured beef stock
Four to eight slices of baguette
140g gruyère, finely grated

Method:
Melt the butter with the olive oil in a large pan before adding the onions and frying them with the lid on for 10 minutes until soft.
Sprinkle in the sugar and cook for 20 minutes, stirring frequently, until caramelised.
The onions should be golden, full of flavour and super soft when pinched between fingers. Take care towards the end to ensure they don’t burn.
Add the garlic cloves for the final few minutes of cooking, then sprinkle in the plain flour and stir well.
Increase the heat and keep stirring as you gradually add the white wine, followed by the beef stock. Cover and simmer for 15 to 20 minutes more.
To serve, turn on the grill and toast the bread. Then ladle the soup into heatproof bowls.
Put a slice or two of toast on top of bowls of soup, and pile on the cheese.
Grill until melted. Alternatively, you can cook the toast under the grill, then add them to the soup to serve.
