Matt Boxall took to to share his perfect for “” soup. He said it’s only 100 calories per portion, and it’s pretty easy to whip up too.
All you need to do is roast one carrot, 80g of chopped sweet potato, 80g of tomato, half an onion and two garlic cloves. Before you pop them in the oven to cook, add some salt, pepper and chilli flakes, and roast at 200C (fan) for 20 minutes.
Once cooked, simply pop the vegetable mix into a blender with a splash of coconut milk and 300ml of vegetable stock. Give it all a good whizz in the blender, and there you have your perfectly simple and super healthy soup!
