can often be a bit of a headache to follow, especially when you’re trying to rustle up dinner after a long day at work.

But this salmon and broccoli is as easy as pie to , with minimal ingredients and just four steps to follow.

Ingredients

150g dried pasta, of any kind

150g broccoli, cut into small florets

One tablespoon of olive oil

Four spring onions, trimmed and sliced or 12 small onions, very finely sliced

Two skinless salmon fillets (around 120g each), cut roughly into 3cm chunks

Good pinch of dried chilli flakes (optional)

100ml double cream

Half a small lemon, finely grated zest only

Salt and fresh black pepper

Method

Start by half-filling a large pan with salted water and bring it to a boil. Add the pasta and cook for seven to 12 minutes, or according to the packet instructions until just tender, stirring occasionally.

Three minutes before the pasta is done cooking, add the broccoli to the water and let it cook with the pasta for three minutes.

Meanwhile, heat the oil in a medium non-stick frying pan and saute the spring onions, or sliced onion, for one to three minutes, or until softened. Remember to stir regularly.

Next, add the salmon pieces and chilli, if using, and cook for about a minute, turning the salmon three to four times.

Add the cream and a ladleful of the pasta cooking water (around 100ml) and season generously with salt and pepper.

Bring the pan to a gentle simmer and cook the salmon for three to four minutes, turning occasionally.

Those who find that the sauce is thickening up too much can add an extra splash of water, but not too much.

Drain the pasta and broccoli and return to the pan, then, finish by adding the creamy salmon sauce and lemon zest and combine them.
