Jamie Oliver’s chicken noodle stir-fry recipe is ‘super easy’ to make in under 20 minutes

One of the best things about a stir-fry is that the ingredients, even those recommended by , can be swapped out for what you have in the house. On his , the iconic chef said the chicken could be swapped for either “prawns, salmon, tofu, or simply more vegetables”.

As for the peanuts that are suggested to accompany the chicken, the nuts can be substituted for cashews or sesame seeds. Even broccoli could be swapped out for any green vegetables you have, as long as they are “thinly sliced”. Here’s Jamie Oliver’s version of a “super easy” but tasty

Chicken noodle stir-fry

Ingredients

30g unsalted peanuts

Two chicken breasts

Two tbsp black bean sauce

150g egg noodles

200g tenderstem broccoli

Method

Put a large non-stick frying pan on medium heat and toast the peanuts, tossing regularly. Remove the toasted peanuts and set them aside.

Meanwhile, score the chicken lengthways – cutting at 1cm intervals and going halfway through the meat – then place it in a bowl with one tablespoon each of olive oil, red wine vinegar, and black bean sauce.

Coat the chicken in the olive oil mixture, then cook the chicken in the hot frying pan for three minutes on each side.

At the same time, cook the noodles in boiling salted water, according to packet instructions.

Add trimmed broccoli to the hot water for the last two minutes of the noodles cooking. Remove the chicken from the frying pan, and slice the meat.

Using tongs, transfer the cooked noodles and broccoli to the hot frying pan. Add crushed peanuts and any remaining black bean sauce until well-mixed.

Divide the coated noodles into two bowls, add the sliced chicken pieces, add any remaining peanuts, and drizzle a little extra virgin olive oil over the top.
