We all love a good but there’s one crucial mistake you might be making that prevents it from reaching its full potential.
Michelin-starred chef, Peter Joseph from Kahani restaurant, has explained what many people get wrong when making their .
Close to London’s iconic Sloane Square, Kahani has received multiple awards for its modern Indian cuisine inspired by the head chef’s childhood growing up in India.
The chef shared the common mistake people make with their curries – not adding enough salt.
Chef Peter Joseph told the : “It does not matter how well you cook the dish if you don’t put the right amount of salt in it – the taste won’t be good.

“When you eat the curry with rice it needs more salt to cover the rice too.”
Taste and adjust the seasoning until the flavour is right.
Another tip the chef gave was to take your time and lower the heat when you’re cooking as rushing could burn the ingredients.
Fresh ingredients will make all the difference including fresh spices.
A local market or an Indian food shop will often offer higher quality spices with fresh bags of masala, garam masala, cinnamon, and more.

The Michelin-starred chef recommended checking the expiry date on your spices as the seasoning is essential to making a dish that is filled with flavour.
Another common mistake is tomatoes.
Adding too many tomatoes will absorb the flavours as they’re filled with water and if you increase the tomatoes, make sure to also increase the spices for balance.
The last mistake he shared was adding more oil or butter to the curry, which doesn’t necessarily enhance the curry and can actually make it greasy or less flavourful.
