Award-winning chef Mike Wilson, who runs the at tombola HQ, has revealed his fool-proof method for achieving that are both perfectly fluffy on the inside and irresistibly crunchy on the outside.

Speaking about the method, Mike noted: “Everyone loves roast potatoes on a Sunday dinner, but balancing a fluffy inside with a crispy edge is hard to achieve.”

The key to success starts with just the humble potato, which Mike recommends parboiling in salted water for 10 to 12 minutes.

He explained, “Let them steam dry before shaking them in a colander and letting them sit for a few more minutes. “

This extra step helps ensure a fluffy interior that provides the perfect contrast to the crispy exterior.

But what really sets Wilson’s apart is the addition of an unexpected ingredient.

For that coveted extra crunch, he suggests sprinkling a tablespoon or two of corn flour or dried couscous over your potatoes.

“This will create a golden skin and unparalleled crunch,” the chef revealed.

It’s an ingredient many might overlook, but it’s the secret to a perfect, golden finish as it adds texture, enhancing the crispiness without altering the flavour.

To elevate the dish further, Mike recommends using goose or duck fat paired with fresh herbs and garlic cloves.

“You should hear a sizzle when you put the potatoes into the piping hot oil,” he said, indicating the importance of temperature in achieving that golden, crispy finish.

While the method may seem simple, it’s rooted in the use of high-quality ingredients. Mike points out that fresh, quality ingredients “make all the difference.”

He encourages home cooks to focus on sourcing local, in-season produce, noting that you don’t have to spend a fortune to make a special meal.
