Scones come out the oven fluffier and taller if you add 1 simple ingredient to the mixture

Nothing is better than biting into a fresh hot scone topped with jam, and they are incredibly easy to make yourself in no time at all.

Thanh, a and founder of has shared that her homebaked scone takes “a mere 10 minutes” to put together and bake for 10 to 15 minutes in the oven.

She said: “Scones are really easy to make and, if you don’t mind getting your hands a bit dirty, it’s possible to make a batch of scones and have it ready to serve in less than 30 minutes.”

However, if you want to ensure your scones come out of the tender fluffy and tender then make sure to add lard (or vegetable shortening) to your scones.

Thanh: “To make plain scones, you start by rubbing cold butter into the dry ingredients until the mixture looks crumbly and resembles wet sand. I also use lard or vegetable shortening to make the scones extra soft.”

It may seem strange, but lard has a high amount of fat which means it does not create gluten when it is mixed with flour, so you have a softer and flaker texture.

As the fat bakes in the oven, it also leaves behind air pocket which will help the scones rise so they are also much lighter and fluffier.

Lard will help retain moisture in the scones so they are more likely to extend their shelflife so you can enjoy them for much longer.

How to make plain scones 

Ingredients

  • 500g of plain flour
  • 50g of unsalted butter (cold and cut into cubes)
  • 25g (two tablespoons) of caster sugar
  • 25g of lard or vegetable shortening
  • Two heaped tablespoons of baking powder
  • One teaspoon of salt
  • 200ml-300ml of full cream milk
  • Eggwash (one egg and one tablespoon of milk)

Instructions

To begin, preheat the oven to 220C. Place a baking tray in the middle of the oven to warm up while you make the scones.

Next, place the flour, salt, sugar and baking powder into a bowl. Use a stand mixer to stir everything together or simply mix everything together with a spoon.

Add the butter and lard (or vegetable shortening) and use a flat paddle attachment to mix everything together. You can also mix without a standard mixer by rubbing the ingredients into the flour with your fingertips.

Once the mixture resembles damp sand, slowly begin to add the milk. You want to add just enough milk for the mixture to come together and become a dough.

Place the dough onto a lightly floured surface and pat it into a circle shape that is three centimetres high. Try not to overwork the dough as it can ruin the texture of the scones.

Use a round cookie cutter to cut out the scones. If you wish, you could also use a small glass to mark out the shape of the scones.

Place the scones onto the preheated baking tray and brush the top of the scones with a eggwash (simply mix together a egg and some milk in a small bowl)>

Put the scones in the oven and bake for 10 to 15 minutes until they are golden on top.

When they are ready to take out the oven serve your mouthwatering scones warm with some cream and jam.
