Make ‘healthy’ rocky road bars by adding 1 surprising ingredient – 9g of protein

For many of us, the day isn’t complete without a sweet snack to enjoy with a cup of tea as a pick-me-up in the middle of the day.

But if you’re on a journey or simply trying to be a bit more mindful about what you’re eating, it can be hard to find something that’ll still satisfy your cravings but won’t derail your progress.

However, you don’t always have to sacrifice your favourite snacks in order to stay on track – there are plenty of options out there that offer a healthier alternative but don’t compromise on taste.

And if a slice of rocky road is your cake of choice, then one should definitely be added to your list.

Her high-protein rocky road bars, which boast 9g of protein, involve making a few simple swaps to the usual in order to make it more nutritious.

And all you need is four simple ingredients – making them the perfect easy treat to make and grab on the go when you need something sweet.

Piera has swapped out the usual base of the rocky road with Weetabix to make it lower in calorie, and by using a sumptuous chocolate protein pudding, they’re ideal for upping your intake but in a way that’ll still satisfy your sweet tooth.

To make four of these rocky road bars, you’ll need five Weetabix, 250g choc protein pudding, 30g mini marshmallows and one rich tea biscuit.

Take a bowl and crush the Weetabix up before adding in the chocolate protein pudding and the marshmallows. Give them a good mix to combine, and then transfer it to a lined dish, making sure to press down as much as possible.

Crumble the rich tea biscuit over the top, along with a handful of extra marshmallows, and press these into the surface too.

Freeze for about an hour to set, then slice into bars, keep in the fridge and enjoy.
