Beans on toast is almost so sacred that few dare to tweak it, but Jamie Oliver’s “super cheap” posh beans on toast dares you to try it without the butter beans and the iconic tomato sauce.

His offered up a nutritious and vibrant Spring , bursting with green goodness from broad beans, peas, mint and spring onions.
Aside from the cupboard staples such as oil, salt, bread and garlic, the ingredients for Jamie’s “good old” beans which is “super-cheap to knock together” can be bought for around 95p per portion.
Sweet tomato sauce doesn’t coat the dish, but instead a salsa made from sliced spring onions, quartered tomatoes, six tablespoons of oil, the zest from half a lemon and most of the juice.

To infuse the broad beans and peas with flavour, suggests boiling them separately with salt and stalks of mint, before blanching them for two minutes in ice cold water.
Once all of the ingredients are cooked and the salsa prepared, it’s as simple as mixing it together and placing it on top of your bread of choice – he opts for sourdough rubbed in garlic, oil and rosemary.
To make it particularly posh, the world renowned chef sprinkles it with crumbly feta, and the leftover from the existing ingredients, such as mint leaves, lemon zest and the whites of spring onion.

At present in each serving would cost about 11p for frozen peas, 20p for frozen broad beans and 28p for baby plum tomatoes, according to recommended portion sizes of their standard sized packets. Spring onions come in at about 10p a piece, a quarter of a lemon about 8p, and a quarter of a pack of mint around 18p.
