Air fryer granola
Ingredients
- 200g jumbo oats
- 100g mixed seeds ie pumpkin, sunflower
- 150g of whole mixed hazelnuts and cashews
- 100g runny peanut butter
- Two egg whites
- 80ml maple syrup or honey
- 10 drops of Stevia or sweetener
- Optional: Cinnamon or spices of choice
For the chia compote:
- 400g bag of frozen summer fruits
- Two tbsp chia seeds
- Optional: Stevia or sweetener drops
Method
Mix the wet ingredients together, then combine the dry ingredients and mix together until everything is coated.
Lay a sheet of parchment paper onto the air fryer. Sprinkle the granola mix using your hands in a single layer on the paper, keeping some clusters – you may need to do this in batches to prevent overcrowding.
Air fry in batches in a single layer at 120c for 12-17 minutes, mixing from time to time until golden and crisp. As they cool they will crisp up, but they’ll still have a hint of that nice chewy texture.
To make the compote, simply heat the frozen fruits until defrosted and bubbling, sprinkle in the chia seeds, mix and allow to cool slightly.
Keep the granola in an airtight container and store for up to one month. This should make around 20 servings, all with just 160kcal, 5g of protein and only 2.6g of sugar.
