Ingredients

Two tbsp olive oil

One onion, chopped

Two celery sticks, chopped

Two garlic cloves, crushed

One tbsp tomato purée

400g can chopped tomatoes

400g can chickpeas

150g orzo or other small pasta shapes

700ml vegetable stock

Two tbsp basil pesto

Crusty bread to serve

Method

Heat one tablespoon of olive oil in a large saucepan. Add the onion and celery, cooking for 10-15 minutes until they begin to soften.

Then, add the garlic and cook for an additional minute. Stir in the remaining ingredients, reserving the pesto and extra oil, and bring the mixture to a boil.

Lower the heat and let the soup simmer for six to eight minutes, or until the pasta is cooked through.

Season to your liking, then divide the soup into bowls. You can present it as a starter in smaller portions or serve it as a main meal.

Combine the pesto with the remaining oil, then drizzle the mixture over the soup for extra flavour and a pop of colour.

Serve with chunks of crusty bread on the side and accompany with your side salad of choice for an extra-nutritious meal.
