Ingredients
One cauliflower, cut into florets
40g butter
40g plain flour
600ml milk
100g cheddar cheese, grated
25g parmesan cheese, grated
One teaspoon Dijon mustard
Sata and pepper
A pinch of ground nutmeg, optional
Method
The first step is to prepare the cauliflower. Preheat the oven to 200C/180C Fan/Gas Mark 6.
Bring a large pot of salted water to a boil, add the cauliflower florets and blanch for four to five minutes until slightly tender but still firm before raining and setting aside.

The next step is to make the cheese sauce by melting butter over medium heat and stirring in the flour. Cook for one to two minutes to form a roux, stirring continuously to avoid burning.
Gradually whisk in the milk, stirring constantly until the sauce begins to thicken. Bring the sauce to a gentle simmer and cook for three to four minutes until smooth and creamy.
Stir in the grated cheddar cheese, Dijon mustard, salt, and pepper, and whisk until the cheese is fully melted and the sauce is velvety smooth. If desired, add a pinch of nutmeg for extra flavour.
The third step is to assemble the dish. Arrange the blanched cauliflower florets in an even layer in a medium-sized baking dish. Pour the cheese sauce over the cauliflower, making sure it’s fully coated, before sprinkling the grated Parmesan cheese over the top for a “crispy, golden finish”.
The final step is to put the dish in the oven and bake for 20 to 22 minutes, or until the top is golden and bubbling.
After, remove the dish from the oven and allow it to cool slightly before serving on its own or alongside your roast dinner. The resting time allows the sauce to set slightly, making it easier to serve.
