I ditched tuna for a nutritious superfood and it was delicious (Image: Isobel Pankhurst)
Having gone vegetarian a number of years ago, it’s been quite a while since I’ve eaten fish, but that doesn’t mean I haven’t been looking for some delicious alternatives.

The , which I found on , needed quite a lot of ingredients but was super simple to make, requiring no cooking and just a mixing bowl and potato masher.
I already had many of the ingredients in the house, but this dish could potentially be a bit more expensive if you need to buy everything separately.

After mixing all the ingredients (sans the mayonnaise) together in a mixing bowl, I just spent about 5-10 minutes mashing them together, and then simply just placed it in the fridge to use later.
The first use of this chickpea tuna was to make spicy tuna rolls, which turned out delicious, mostly thanks to my partner’s sushi-making skills – something that I do not possess.
Then, the next day, this was used to make lunch and it was here that I threw some vegan mayonnaise into the mix. While my partner opted to have this in a sandwich, I chose to put make avocado bowls with mine.
