Celebrity chef Rick Stein has shared a delectable for a garlic lemon chicken traybake with potatoes that’s perfect for a fuss-free, delicious family dinner.
Rick’s easy-to- dish features crispy chicken and tender , all roasted in a flavourful garlic and lemon sauce, as detailed in his cookbook Simple Suppers.
The preparation time is under 10 minutes, with the oven doing the rest of the work for about 35 to 40 minutes.
Rick Stein, inspired by Lulu Bonneville – the wife of Downton Abbey actor Hugh Bonneville – praised her culinary skills in his book.
He said: “I love getting recipes from those understated but really good cooks who manage to produce something delicious and are also so organised that they are around for the glass of Champagne on arrival. They just seem to magic the food up.”

The ingredients in this can be amended if you want to add more veggies like carrots or parsnips.
Ingredients
12 chicken thighs
Eight potatoes
Five garlic cloves
Three courgettes
Two fennel bulbs
Thyme leaves
Lemon juice
Four tablespoons of olive oil
Salt and pepper
Method
To whip up this mouth-watering traybake, you’ll need to preheat your oven to 220C (200C fan/gas mark seven) before anything else.

Next, prepare the ingredients including chopping garlic and slicing courgettes, fennel bulbs, and potatoes, then mix lemon juice, garlic, thyme, and olive oil in a bowl.
Start cooking by heating a bit of oil in a frying pan over medium-high heat and browning the chicken thighs until the skin turns golden.
Place the potato, courgette and fennel slices in a large roasting tin, drizzle over two-thirds of the garlic lemon mixture, season with salt and pepper, then toss until all vegetables are coated.
Position the chicken thighs on top, skin side up, pour over the remaining lemon garlic mixture, and season with salt and pepper.
Roast in the oven for 35 to 40 minutes until the chicken is crispy and golden and the vegetables underneath are tender.
Your speedy yet delicious chicken traybake is now ready to be served on its own, with a side of green beans or salad.
