Banana bread is a great dish to bake when you wish to make something tasty and simple, but you can make it even better by adding one extra ingredient to the batter.

Mandy Rivers, a and founder of , has tried out dozens of banana bread throughout the years and discovered that the “secret” to super buttery bread is mayonnaise.

She said: “I know it seems unorthodox, if not downright wrong, but y’all I’m telling you, this is it. This is the secret to super moist banana bread.”

It may seem strange, but the eggs and oil in mayonnaise will react to any baking soda in the mixture, which will result in a richer banana bread that will have a velvety texture.

Adding mayonnaise to banana may be controversial, but it will add more moisture to the bread to help it stay fresh for much longer without impacting on the taste.

Mandy said: “Trust me. You will love this . The flavour is incredible (not even a hint of mayo taste) and like I said, it is so moist and it stays moist.”

How to make banana bread taste even better

Ingredients

  • 180g of flour
  • 200g of granulated sugar
  • 150 of mayonnaise
  • 75g of butter (room temperature)
  • Two eggs
  • Three overriped bananas
  • One teaspoon of vanilla extract
  • One teaspoon of baking soda
  • Half a teaspoon of salt

To begin, preheat the oven to 180C. Grease a loaf pan and then set it aside for now.

Mix together the mayonnaise, butter, vanilla extract, sugar and eggs until well combined.

Place the bananas in a small bowl and mash together with a fork until you have no lumps. Whisk the mashed bananas into the sugary cake batter.

Next, sift the flour, baking powder and salt together in a separate mixing bowl. Then gently fold the flour mixture into the cake batter until just combined. Be careful not to overmix.

Pour the batter into the prepared load pan and place in the oven for 55 to 65 minutes or until the banana bread is golden brown on top.

You will know the banana bread is ready when you can insert a toothpick into the middle of it and it comes out clean. If there is wet batter on the toothpick, it still needs more time to bake.

Once you take the banana bread out the oven, leave it alone to cool in the pan and only then should you serve it.

Mandy said: “It will be even more moist if you let it cool in the pan. Remember, this banana bread doesn’t have to be warm to be moist and delicious – it’s going to be fresh-from-the-oven soft and tender for days.”
