You know when you’re making scrambled eggs wrong when it turns out rubbery and chewy or dry and crumbly.

Instead, they should be fluffy, moist, tender, custardy, bright yellow and taste of pure, rich egg.

With a time of eight minutes, cookbook author and the woman behind food blog Suzy Karadsheh has shared her go-to scrambled eggs , which “makes for the perfect quick and healthy breakfast yet are still totally indulgent”.

Suzy claimed that scrambled eggs turn out “luxuriously creamy and soft” in minutes with her secret ingredient – Greek yoghurt.

She said: “This simple addition amps up the flavour, boosts the protein and gives you the creamiest, softest scrambled eggs.

Ingredients (serves two)

Four large eggs

Sea salt

Extra virgin olive oil

Two to three tablespoons Greek yoghurt

One tablespoon of chives, chopped

Method 

The first step is to prep the eggs by adding them to a small mixing bowl and seasoning with a big pinch of salt. Add one teaspoon of olive oil and whisk until combined.

In a small nonstick skillet, add one to two tablespoons of olive oil and set over medium heat. Warm the olive oil only for 30 seconds or so, then add the whisked eggs.

Cook the eggs over medium heat, stirring regularly with a spatula, until the eggs are beginning to set – there should be some wet parts.

Next, turn the heat off and add the Greek yoghurt. Continue to stir until the yoghurt is fully incorporated and the eggs have fully set. Taste and adjust seasoning.

Transfer the scrambled eggs to your plates and finish with the chives. Enjoy immediately.
