Ingredients

225g of self-raising flour

100g of finely grated cheese

50g of butter

One large egg

One teaspoon of mustard powder

One teaspoon of baking powder

One-quarter teaspoon of salt

Pinch of cayenne pepper

Method

Start by preheating the oven to 220°C (or 200°C for fan ovens, or Gas Mark 7) and lightly grease a baking tray.

In a large bowl, combine the dry ingredients: flour, mustard powder, salt, cayenne pepper, and baking powder. Add the butter to the dry mix, and using your fingertips, rub it in until the mixture resembles fine breadcrumbs. Once this is done, stir in the grated cheese.

In a separate jug, crack an egg and whisk it lightly. Then add 150ml of milk and mix them together until fully combined.

Pour most of the egg and milk mixture into the flour mixture, reserving a tablespoon in the jug for glazing the scones later. Stir gently until the mixture begins to come together into a soft dough.

Turn the dough out onto a lightly floured surface. Knead it briefly, then roll it out to a thickness of about 2cm. Use a round cutter, approximately 8cm in diameter, to cut out 10 scones.

Arrange the scones on the prepared baking sheet and brush the tops with the reserved egg and milk mixture.

Bake in the oven for around 10 minutes, or until the scones are pale golden brown. Once done, remove them from the oven and place them on a wire rack to cool. Your delicious cheesy scones are now ready to enjoy.
