INGREDIENTS ‍ (makes 8 mini loaves) ️ 2 medium bananas, mashed ️ 60g (1/2 cup) protein powder (I use @myproteinau – code ALICESCOTT gets you the best discount) ️ 170g (3/4 cup) @yoproau Greek yoghurt (high protein yoghurt) ️ 50ml (1/4 cup) honey or maple syrup ️ 2 large eggs ️ 1tsp vanilla extract ️ 280g (1 1/4 cups) oat flour (blended oats) ️ 1tsp cinnamon ️ 1 tsp baking powder ️ 1/2 cup dark chocolate chips and extra to top Method 1. Preheat your oven to 180oc 2. Whisk your eggs, banana, yoghurt, honey and vanilla extract 3. Add your oat flour, baking powder, protein powder and cinnamon and stir together well 4. Fold in your chocolate chips and transfer to a greased loaf pan (link in my bio) and top with extra chocolate chips 5. Cook for 15-20 minutes in the oven until golden brown and cooked through 6. High Protein Mini Banana Bread

Ingredients (make eight)

  • 2 medium bananas, mashed
  • 60g protein powder
  • 170g Greek yoghurt (high protein yoghurt)
  • 50ml honey or maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 280g oat flour or blended oats
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 cup dark chocolate chips, extra for toppings

Method

Preheat your oven to 180℃. Whisk your eggs, banana, yoghurt, honey and vanilla extract in a bowl.

Add the oat flour, baking powder, protein powder and cinnamon into the wet mixture and stir together well. Fold in the chocolate chips and transfer to a greased mini loaf pan.

Top with extra chocolate chips. Cook for 15 to 20 minutes in the oven until golden brown and cooked through.

Leave to cool and store in an airtight container.
