Homemade garlic and lemon chicken traybake is ‘incredibly simple’ to prepare in 10 minutes

Making a homemade and healthy meal can be a struggle if you have been busy all day, but you can cook something delicious with almost no effort if you have the right

Catherine, a cook and founder of Blue Sky Eating, has shared that her lemon and garlic chicken traybake is easy to cook and is also “bursting with flavour”.

What is fantastic about this is that it takes five to 10 minutes to prepare before it goes into the oven to cook for 40 minutes.

Catherine said: “As well as being incredibly simple to throw together, this chicken bake is so mouth-wateringly good.

“There’s something about allowing all those flavours to mingle together in one tray that really levels up the deliciousness!

How to make a garlic and lemon chicken traybake

Ingredients

For the traybake:

  • Four chicken thighs (skin-on)
  • 450g of baby potatoes
  • One red onion
  • One courgette
  • One lemon
  • Olive oil
  • Salt and paper

For the marinade:

  • Two lemons
  • Six cloves of garlic
  • One tablespoon of honey
  • 100ml chicken or vegetable stock
  • Two tablespoons of olive oil

Recipe: 

To begin, preheat the oven to 210C (190C for a fan oven)

Next, prepare the vegetables. Chop up the onion, lemon and courgette, then add to a baking tray.

Add the potatoes to the baking tray and drizzle everything with olive oil. Season salt and pepper then mix everything together until coated in oil.

Use some paper towels to pat the chicken thighs dry and then place them in the baking tray between the potatoes and vegetables.

To make the lemon and garlic marinade Zest and juice a lemon, then crush the garlic. Place in a bowl along with the other marinade ingredients and mix together.

Place the traybake in the oven. Cook for a total of 40 minutes but halfway through the cooking time (at the 20-minute mark) drizzle the lemon and garlic marinade over the baking tray.

Once the time is up your simple, yet mouthwatering, dinner will be ready to eat.
