A cold, gloomy  day seems a lot nicer if you know that at the end of it, a delicious, warming meal will be waiting for you at the dinner table.

That’s where ’s quick and easy one-pot sausage and red pepper stew comes in.

The chef’s dish from her cookbook ‘Simple Comforts’ is as vibrant as it is easy to make, and it serves four, making for a lovely family meal.

What’s great about this is you can prepare this meal up to eight hours ahead. Whenever you’re ready to eat it, just bring it back to a boil to reheat.

Mary Berry’s sausage stew recipe

Ingredients

One tbsp sunflower oil

Eight spicy pork sausages

Four rashers of smoked bacon, finely chopped

One onion, sliced

One red pepper, deseeded and cut into large pieces

One large carrot, diced into small pieces

One garlic clove, crushed

300ml chicken stock

400g tin of chopped tomatoes

Two tbsp sun-dried tomato paste

Twofresh thyme sprigs

250g baby new potatoes, skin on, thickly sliced into discs

salt and freshly ground black pepper

Method

Use a large, deep skillet or a flameproof casserole with a lid. Heat some oil in the pan over high heat. Add the sausages and brown them thoroughly on all sides, then take them out and set aside. Next, cook the bacon in the same pan until it’s crispy, then remove and set aside as well.

Add the chopped onion, bell pepper, carrot, and garlic to the pan, sautéing on high heat for around five minutes.

Pour in the stock, chopped tomatoes, and tomato paste, then drop in the thyme sprigs. Bring the mixture to a boil, then toss in the potatoes and season with salt and pepper.

Lower the heat and return the sausages and bacon to the pan. Cover the pan and let it simmer gently for 20 minutes.

Afterwards, remove the lid and continue to simmer for another 10 minutes, letting the sauce reduce slightly and ensuring the sausages and veggies are cooked through.

Serve the dish in bowls with a side of green vegetables of your preference, as well as some rice.
