Elevate your boxed cake mix by adding one simple ingredient to the batter
If you want to bake something tasty and quickly then there is no shame in using a boxed mixture – but there is a simple way to evaluate your cake to make it taste even better.
Olivia Bogacki, a pastry chef and founder of , has shared the best way to make sure your cake comes out of the oven “extra moist and delicious” if to use sour scream.

“I recommend using full-fat sour cream because really, we’re not about saving calories at this point, right?”
Sour cream has a high-fat content and a creamy consistency, which will result in a moist and rich texture without thinning out the cake batter.

The acidity in sour cream will also react to any baking soda or baking powder in the cake mixture to help it rise while cooking, resulting in a lighter and better-tasting cake.

How to bring your box cake mixture to the next level
Ingredients
- One box of yellow or white cake mix
- 125g of all-purpose flour
- 200g of granulated sugar
- Half a teaspoon of salt
- Three large eggs (room temperature)
- 320ml of milk or water
- 30ml of vegetable oil
- Two teaspoons of vanilla extract
- One carton (250g) of sour cream (room temperature).

To begin, preheat the oven to 150C. Then grease and flour two 20cm cake pans.
Add all the dry ingredients (cake mixture, flour, sugar and salt) to a bowl, and whisk everything together until combined.
Slowly add the wet ingredients (vanilla extract, oil, vanilla extract, sour cream and eggs) to the dry ingredients. Use a mixture on low for two minutes but you can easily do this by hand.
Make sure the cake batter is fully mixed together, and then add to the prepared cake pans. Then bake in the oven for around 50 minutes or until fully risen.
To test if the cake is done, stick a toothpick in the middle of the cake, and if it comes out clean, the cake is ready. If the toothpick has batter on it, the cake needs more time in the oven.
Once the cakes are out of the oven leave them to cool in the pans for 10 minutes, then turn out onto a wire rack to cool down completely.
Your cake will be fluffy and moist and taste absolutely delicious. You can now decorate it however you please.
