Florencia Baldini has shared her simple two-ingredient cookie recipe (stock)

She took to to share an instructional video on how to create healthy cookies – using just two ingredients. What’s more, they’re gluten free, nut free, dairy free and contain no added sugar – and something Florencia describes as “accidentally vegan”.
“These cookies are very easy to make,” she began, adding that flour isn’t required. “Just blend together shredded coconuts and dates and shape into cookies with your hands and bake.”
Florencia added: “They’re the perfect sweet treat for after dinner.” After showcasing the scrumptious looking finished product, she detailed the instructions in caption.
“Ingredients for 10 cookies: 120g shredded coconut, 120g soft medjool dates (stone removed), optional pinch of salt,” Florencia wrote. “Add the ingredients to a food processor and blitz until well combined.”

Next, Florencia advises to take a tablespoon of the mixture and shape it into a cookie, before repeating the process with the remaining dough. She continued: “Arrange the cookies on a baking tray lined with baking paper.”
The foodie closes her by telling her followers to bake at 160C for 12 minutes for the best results. “Once out of the oven, the cookies will be very soft,” Florencia warns. “Let them cool completely before enjoying.”

A third asked: “What kind of coconut? I have the unsweetened flakes.” He was advised: “Unsweetened are fine. The sweetness of the dates will make them sweet enough.” Whilst a fourth hailed: “My two favourite things ever.”
Despite her ingredient list being so short, Florencia commented: “No, I’m not vegan, and I’m not planning to be! But every year, I love a good challenge – and this time, it’s all about finding the best recipes that just so happen to be vegan.”
She continued: “Over the years, I’ve shared plenty of recipes that were ‘accidentally vegan’ without even mentioning it, and you all loved them! The word ‘vegan’ often gets a bad reputation, but vegan food can be just as delicious – you just need the right combination of ingredients. Exploring vegan recipes is a chance to keep an open mind, discover new flavours, and realise that plant-based dishes can taste just as good as their non-vegan counterparts.”
