Mug cakes are exactly what they sound like – a simple cake batter microwaved in a mug.

Ingredients for chocolate and banana mug cake

“It’s perfect for those days when you need a warm hug in a mug. Feel free to mix up the flavours.”

The makes enough for four small cups, but as mine were slightly larger I made three.

Although Jamie claims that the prep and time for this is 10 minutes, I was able to get it done in just under three minutes.

Ingredients 

One small ripe banana

75g self-raising flour

50g soft brown sugar

Vegetable oil

One large free-range egg

Chocolate of choice – I used broken-up squares of Cadbury Dairy Milk chocolate

Method 

Start by peeling a banana, placing it in the bowl and mashing it by hand or add it to a food processor and blitz. I opted for the latter as it sped up the process significantly.

The next step was to add the flour with a pinch of sea salt, along with the sugar and four tablespoons of oil. Crack in the egg and pulse (or whisk) until smooth.

After, divide the mixture between four small microwave-proof cups (roughly 200ml) or three larger mugs.

Break the chocolate bar into chunks and push into the mixture, then microwave on high (800W) for one minute, or until risen and gooey in the middle. I found that one minute was the perfect time for this mug cake.

I only microwaved one of the mug cakes and left the other two in the fridge for the rest of my family to enjoy the next day.

Once the cake is ready, remove from the microwave and leave to cool slightly.

The mug cakes are delicious on their own or can be served with a dollop of yoghurt or custard, or a small scoop of ice cream.
