Scrambled eggs will be creamier and tastier if you add 1 ingredient to the frying pan

Nothing is worse than spending time cooking scrambled eggs only for them to come out dry and crusty — but you may be cooking them wrong and not using an essential ingredient.

Joanne Gallagher, a cook and co-founder of , has suggested ditching butter and cooking scrambled eggs in olive oil instead.

She said: “It’s pretty common (and delicious) to cook scrambled eggs in butter, but olive oil works nicely, too. If you want to give it a try, stick to lighter, fruiter olive oils.”

Olive oil has a higher smoke point than butter, which means it can tolerate a higher heat without causing your food to burn.

Using olive oil instead of butter will also improve the texture as it coats the eggs more evenly, so there is a creamy consistency to make your scrambled eggs silkier and smoother.

How to make scrambled eggs using olive oil

You will need: 

  • Four large eggs
  • Half a teaspoon of olive oil
  • A pinch of salt

Recipe: 

To begin, crack the eggs into a bowl, add a pinch of salt and whisk thoroughly until everything is thoroughly mixed. Then leave the eggy mixture to sit for 10 to 15 minutes.

Joanne explained: “As the eggs sit with the salt, the salt works on some of the proteins in the eggs, making our scrambled eggs more tender.”

Next, pour the olive oil into a non-stick pan and place it on a medium-low heat on the stove to heat up.

Once the olive oil begins to sizzle, lower the heat and pour the eggs into the frying pan. Use a silicone spatula to move the eggy mixture around the pan.

Move the eggs in a small circular motion and do not stop moving them until the eggs are thick and small curds begin to form. This should take roughly 30 seconds.

Once the eggs are becoming solid, move the eggs in longer sweeping motions across the pan until they begin to form bigger curds. This should take roughly 20 seconds.

When the eggs have set but are still moist and still slightly runny, remove the frying pan from the heat.

Leave the eggs alone in the frying pan for a few seconds as they will continue to cook.

Give the scrambled eggs a final stir, season with salt and pepper or any herbs of your choice, then your delicious breakfast is ready to serve.
