Make ‘unreal’ pistachio and white chocolate breakfast cookies – five ingredients

It’s a well-known fact that breakfast is the most important meal of the day, as it provides a much-needed energy boost to set you up for whatever lies ahead.

However, it can be hard to find the time to – and if you’re stuck in the cycle of just having cereal or toast, then it can get pretty boring.

However, one has recently shared an ‘unreal’ for white chocolate and pistachio breakfast cookies that are almost more like a dessert.

And with just five ingredients, they’re very simple to throw together, and they can be meal-prepped so you’ve always got something to grab if you’re in a rush.

Made with just five ingredients, these breakfast cookies are quick and easy to make – and you can even bake them in the air fryer too.

They’re also made without eggs or flour, but the sweetness of the pistachio cream adds a touch of luxury that makes it feel as though you’re eating dessert.

Ready in less than 15 minutes, they’re the perfect option if you’re in a rush. Here’s everything you need to make one serving, which is four cookies.

Pistachio and white chocolate breakfast cookies

Ingredients

  • One ripe banana
  • 15g pistachio cream, plus extra for drizzling
  • 1/2 teaspoon baking powder
  • 50g rolled oats
  • 20g white chocolate chips
  • Pinch of salt

Method

Firstly, preheat your oven or air fryer to 180C, and mash up the ripe banana in a bowl until smooth.

Then, add the pistachio cream, baking powder and the pinch of salt, and stir well until everything’s combined. Stir in the rolled oats afterwards, and give this a really good mix, followed by the white chocolate chips.

Split the mixture into four rounds and space them evenly on a lined baking tray or air fryer basket, and bake for 12-14 minutes.

When they’re ready, allow them to cool before drizzling over some extra melted pistachio cream, and enjoy.
