Now, as the weather gets colder, it is the best time to stay warm indoors with your favourite dessert, and it is incredibly easy to make something delicious like coffee cake at home.

Rachel, a developer and founder of , has shared that one way to make your coffee cake fluffier is to add sour cream to your mixture.

She said: “Ingredients like butter and sour cream are great sources of moisture and fat for coffee cakes! If the cake is coming out too dry, it likely needs more butter.”

Not only does sour cream add moisture to a cake but it will also trap air in the batter when combined with baking soda which will help the cake rise better when it in the oven.

Rachel added: “The acid content of sour cream activates baking soda’s leavening abilities!”

Sour cream will make the cake taller and lighter and can also help enhance the taste of the cake due to how creamy this ingredient is.

  • 190g of all-purpose flour
  • 170g of unsalted butter (softened)
  • Two eggs
  • Two teaspoons of vanilla extract
  • Half a teaspoon of baking soda
  • A quarter teaspoon of salt
  • 120g of sour cream
  • One teaspoon of raspberry preserve (optional)

How to make a coffee cake topping

  • 60g of all-purpose flour
  • 60g of light brown sugar
  • Two teaspoons of cinnamon
  • Four tablespoons of butter
  • A sprinkle of salt

Recipe

To make the cake batter:

To begin, preheat the oven to 160C. Grease a loaf pan with butter and line with baking paper.

Then, in one mixing bowl, combine all the dry cake ingredients (flour, baking soda and salt). In another mixing bowl, add the softened butter and sugar. Mix together until you have a fluffy pale yellow mixture.

Next, add the eggs and vanilla extract to the pale yellow mixture and beat together until everything is combined.

Slowly add half the dry cake ingredients to the pale yellow mixture and mix until combined.

Mix in the sour cream and then add the remaining half of the dry ingredients until you have a cake batter.

Make the coffee cake topping (optional):

Pour the flour, cinnamon, salt and brown salt into a mixing bowl. Melt four tablespoons of butter in a small bowl, and once cooled pour it over the dry ingredients. Gently mix everything together until crumbs are formed.

How to bake the coffee cake:

Pour half of the cake batter into the prepared loaf pan. If you wish, spread the raspberry preserve over the first cake batter layer and then add the second half of the cake batter on top of the raspberry centre.

Spread the crumb coffee cake topping on top of the cake and then place in the oven. Bake the coffee cake for 60 to 65 minutes or until the edges are a slightly golden colour.

Once ready, take the cake out of the oven and let it cool in the pan for five minutes. Then leave it on a wire rack to fully cool down.

Your mouthwatering coffee cake will now be ready to serve.
