- For five minutes, grill the marinated shrimp over high heat, flipping them as they sear.
- Cut the romaine lettuce chunks lengthwise in half and remove a few leaves from the centre so they resemble a “boat”.
- Place the lettuces on a baking tray and add salt and drizzle with extra-virgin olive oil.
- Put the romaine hearts on the grill, cut-side down on the outermost part of the grill for about a minute or two.
- Then take off the grill after a nice char has formed.
- Place shrimp on top of lettuce boats and finish with a drizzle of dressing, croutons and parmesan.
Meghan Markle reveals grilled shrimp salad recipe
Meghan, speaking to former Today host Matt Lauer, described how she’d make “yummy” handheld lettuce salad boats gilled with grilled shrimp.
She said in the resurfaced clip: “It’s really simple. We’re just going to do a nice grilled romaine salad with grilled shrimp on it.
“So we have Italian seasoning, crushed red chilli flakes, honey, you can do any sort of dressing you want.”
She then began marinating the shrimp and added olive oil, lemon, salt and pepper before telling the viewers to leave it for about an hour in the fridge.
The former actress added that the marinated protein should be kept in room temperature before being grilled.
She then moved on to the lettuce, saying she’s going to grill it, with Mr Lauer admitting that he “hadn’t heard” of anyone grilling lettuce.

Meghan Markle places lettuce on grill
Meghan said: “This is what I love. You can grill lettuce and it has the most amazing flavour.
“It holds up. You can grill radicchio, kale, whatever you want.
“You want to halve it lengthwise so that it ends up still keeping that base on there because, ultimately, you can end up holding it like a hand-held salad.”
The duchess then put everything on the grill, notice after she placed the lettuce: “They’re going to cook really quickly, but again because it’s a sturdy lettuce , it’s not going to break down. You’ll get a nice char mark.”
After she finished assembling her salad boats, Meghan said: “It makes this little boat shape so it’s really easy to fill in. They’re really yummy and so easy!”
