Mary Berry’s chicken bake takes just 5 minutes to prepars
Now that the temperature has dropped, it’s time for some home-cooked comfort food, and the good news is you don’t need to make anything complicated to enjoy a delicious dinner.
Mediterranean chicken bake is the perfect way to warm yourself up this winter – and it takes just five minutes to prepare before it goes in the oven for 40 minutes.
This tasty serves six people and is perfect to make for large family gatherings or on a weekday when you cannot be bothered something complicated.
In her cookbook ‘ Cooks’, Mary said: “This is a great way to feed the family as the chicken and veg are all cooked in one very large tray in the oven.
“It takes only minutes to put everything together then it sits in the oven for under an hour with no fussy finishing off to do and only one pan to wash up”

How to make Mary Berry’s Mediterranean chicken bake
Ingredients (serves six)
- Six chicken thighs
- Six chicken drumsticks
- 1kg of potatoes, (cut into five-centimeter chunks)
- Six rashers of bacon (cut into one-centimetre slices)
- One onion (cut into wedges)
- Two garlic cloves (crushed)
- Five preserved lemons (cut into quarters)
- One and a half teaspoons of paprika
- Three courgettes
- One can (200g) of green olives
- Three tablespoons of olive oil
This recipe serves six and will be great for a big family gathering
Recipe:
Preheat the oven to 220C (200C fan or Gas Mark 7).
Add the potatoes to a large roasting tin along with two tablespoons of olive oil. Toss them around the tin to coat them, then add the onion, garlic, bacon and chicken pieces as well.
Place the lemons in the roasting tin, Season everything with paprika then place in the oven. Cook for 40 minutes.
Make sure everything is not overcrowded, otherwise it will not cook evenly. Divide the food between two large roasting tins if you need to.
In a bowl, add one tablespoon of olive oil along with the courgettes and some salt and pepper. Toss the courgettes until they are fully coated.
Once the cooking time is up, add both the courgettes and olives to the roasting tin. Then place back in the oven for 20 minutes until everything is golden brown and tender.
