Ingredients

Two egg whites

100g caster sugar

175g ground almonds

One tsp almond extract

55g blanched almonds, chopped:

55g icing sugar, sifted

Method

Line two large baking trays with baking paper. Place the egg whites in a large bowl and whisk “until they look like clouds”.

Slowly add the caster sugar, one tablespoon at a time, until the egg whites are stiff and glossy. Fold in the ground almonds, almond extract and chopped. Then chill in the fridge for 30 minutes. Preheat the oven to 180C (160C fan/gas four).

Place the icing sugar in a large bowl. Using wet hands, shape the egg white mixture into 24 balls and coat in the icing sugar.

Place on the baking trays, leaving space for the balls to spread. Bake in the oven for 20 minutes. Remove from the oven and leave to cool on a wire rack.
