Festive Sausage Rolls
Ingredients
- 320g pre-rolled puff pastry
- 450g pork sausage meat
- 8-9 streaky bacon rashers
- 200g cranberry sauce
- 170g stuffing
- One large egg
- Dried thyme
Method
Prepare the stuffing and remove the sausage meat from the skins if using pre made sausages. Start by rolling out the pastry sheet keeping the paper underneath.
Evenly spread cranberry sauce leaving about 2cm free either side. Layer the bacon on top of the cranberry.
Then spoon on and spread the stuffing evenly on top of the bacon. On one side of the pastry, line the sausage meat end to end. Egg wash the sides.
Then using the paper, lift and gently fold the pastry over the sausage until the two egg washed sides meet. Seal the edge all the way along with a fork.
Then carefully cut into equal pieces and place on grease proof paper on an oven tray. Egg wash each roll all over.
Add a sprinkle of dried thyme on top of each. Then place in a preheated oven at 180℃ (Fan) for 35 to 40 minutes. Once cooked enjoy straight away, or leave to cool and eat later.
