How to make Jamie Oliver’s roast chicken tikka bake
Ingredients (serves four)
- One whole chicken (around 1.2kg)
- One head of cauliflower (around 600g)
- 800g of potatoes
- Two tablespoons of tikka curry paste
- Bunch of fresh coriander (around 30g)
- Salt and pepper
- One tablespoon of red wine vinegar
- One tablespoon of olive oil
This recipe is made with simple ingredients you likely already have in your kitchen
Method
To begin, preheat the oven to 180C or Gas Mark 4.
Prepare the vegetables by washing the potatoes and then cutting them into three-centimetre chunks.
Then trim the cauliflower stalk, remove any tough outer leaves then cut the cauliflower into roughly the same size as the potato chunks.
Finely slice the coriander stalks and then place the leaves in a bowl of cold water.
Place the chopped-up vegetables and coriander stalks in a roasting tray, then toss in one tablespoon each of red wine vinegar and olive oil. Season with salt and pepper.

Sit the chicken in the tray and rub the skin all over with the tikka curry paste, making sure to get into all the nooks and crannies of the meat.
Place the chicken directly on the bars of the oven and place the roasting tray directly underneath the chicken to catch all the flavourful juices.
Roast the chicken and vegetables for one hour until everything is fully cooked through and golden. Make sure to remember to turn the vegetables over halfway through the cooking time.
Add the chicken back onto the top of the vegetables and leave to rest for five minutes, then sprinkle over the coriander leaves.
Your tasty roast chicken dish is now ready to serve.
