Air fryer gingerbread cookies
Ingredients
- 250g all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 tsps ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp salt
- 115g unsalted butter, softened
- 100g brown sugar
- 60ml molasses
- 1 egg
- 1 tsp vanilla extract
- Icing and sprinkles for decoration (optional)
Method
To start, preheat your air fryer to 180C. Then, in a bowl, whisk together the flour, baking powder, baking soda, ginger, cinnamon, cloves and salt.
In a second bowl, cream together the butter and brown sugar.
Add the egg, molasses and vanilla extract, making sure to mix well.
Then, gradually add the dry ingredients to the wet ingredients, forming a dough.
Wrap the dough in clingfilm and chill for at least one hour.
Once chilled, roll out the dough on a floured surface and cut out shapes using cookie cutters.
Place the biscuits into your air fryer basket, ensuring they’re not too closely packed.
Air fry for eight minutes, until the biscuits are golden brown.
Let them cool before decorating with icing and sprinkles, if desired.
