Takeaway-style chicken tikka
Ingredients
- 500g chicken thighs, cut into chunks
- Six garlic gloves
- 3/4 tsp ginger paste
- Pinch of salt
- Fresh coriander
- 1/2 tsp turmeric
- 3/4 tsp cumin powder
- 1 heaped tsp coriander powder
- 3/4 tsp paprika
- 1/2 tsp chilli flakes
- 1 tsp tandoori powder
- 1/4 of a lemon, juiced
- 1 egg white
Method
- Place the chicken thighs in a large bowl. Grate in ‘plenty of garlic’ – the chef used six cloves in this but you can use more or less depending on your preference.
- Add the ginger, salt, coriander and all of the spices, then squeeze in the lemon and mix everything together. Add in the egg white and mix again.
- Let it sit for 10 minutes, allowing the flavours to marinate. When the time is up, grab some skewers and insert the chicken on to these.
- Put them in the air fryer at 190C for six minutes, then take them out, flip, and put them back in for another five minutes.
- Take them out and serve either on their own or in a wrap or with rice.
